- Recruited for our project to bring the True Neapolitan Pizza to Como, Federico welcomes the proposal without thinking twice: his intention is to become an ambassador of the Neapolitan pizza culture and at the same time grow professionally learning to combine excellent local products.
Federico's research and experimentation don't just want to be a "gourmet" range of pizzas made with the use of superior ingredients in terms of quality and refinement, but also the expression of continuous research.
His method has fixed rules, based on combinations of different flours, studied and "tested" day by day based on the strength of the mixtures, gluten, humidity and temperature.
